Why Code 128 B, and only Code 128 B
Code 128 subset B encodes the printable ASCII range (space through ~), which is what a general-purpose generator needs: it accepts whatever text you have rather than a fixed format.
EAN and UPC are deliberately not offered. They encode a fixed-length number with a checksum the user does not control, so accepting free text there would silently produce official-looking codes that no scanner accepts.
